A’s Empire Chicken

This recipe and blog post was written by my boyfriend A He also loves to cook, but is more into gaming than blogging. He does have a gaming Instagram if you want to check it out (@Andy2k64gaming). I’ll pass you over to A for his amazing chicken recipe!

I’ve always being a fan of Tandoori-Style chicken. I think that the aromatic flavours of spice and seasoning shine better on a dry rub dish. My mum was the first person to cook this dish for me and I remember it well. The infusion of spice and chicken made this much more special than any Tandoori dish I had ever tried. The best thing about this recipe is that it’s much easier to make than you think, it looks impressive and smells amazing! Granted you will need lots of spice ingredients but it’s definitely worth it!

(Kay – This is the perfect alternative for a roast dinner on a Sunday!)
– 1.4 kg whole chicken
– 1 heaped tablespoon garlic , finely grated
– 1 heaped tablespoon fresh ginger , finely grated
– 1 heaped tablespoon fresh red chilli , finely grated
– 1 heaped tablespoon tomato puree
– 1 heaped teaspoon ground coriander
– 1 heaped teaspoon turmeric
– 1 heaped teaspoon garam masala
– 1 heaped teaspoon ground cumin
– 2 heaped teaspoons natural yoghurt
– 1 lemon , zest and juice of
– 2 level teaspoons sea salt
Bombay Potatoes Ingredients:
– new potatoes
– sea salt
– ground pepper
– 1 lemon
– olive oil
– 1 heaped teaspoon black mustard seeds
– 1 heaped teaspoon cumin seeds
– 1 heaped teaspoon garam masala
– 1 heaped teaspoon turmeric
– 1 bulb garlic
– 1 fresh red chilli , deseeded and finely sliced
– 2 tomatoes , roughly chopped
– 1 small bunch fresh coriander


Empire Chicken
1. Pre-heat an oven to 200°C/400°F/gas 6.
2. Take the chicken and slash some of the flesh down to the bone where possible.
3. Take all of your ingredients for the chicken and toss into a bowl.
4. Mix the ingredients into a paste and rub all over the chicken, paying attention to those cuts you made earlier!
5. Now you can place it straight into the oven but if you can, allow it to marinate for a few hours.
6. When putting it into the oven, place on a greased baking tray on the middle shelf.
7. You don’t need to cover the chicken! The rub may blacken but this is all part of the flavour.
8. Like with any whole chicken, cook for 45 minutes per kilo plus an additional 20 minutes. Make sure the juices run clear before serving!

Bombay Potatoes

1. Par-boil some new potatoes for 10 minutes and drain then cut into halves.

2. Mix all of the Bombay Potato ingredients in a large bowl and add the potatoes.
3. Toss the spices and potatoes together.
4. When the chicken has been in for around 45 minutes, put the potatoes on the shelf below.
5. Mix them a few times while cooking.
Well that’s it! You can serve it with rice or a salad would go well with this dish. I’d serve the chicken with a slice of lemon to bring out the aroma of the spices. I didn’t have natural yoghurt so I used Greek yoghurt that seemed to work fine.

  1. This looks super yummy! Looks like it would be perfect for a picnic too! I have started favouring chicken more now that I am on keto and am always looking at new marinades… bar the potatoes, this looks like it will be added to my cook list! Sim x #PoCoLo
